Wollundry Grove Lemon Cake

Ingredients:

  • 1 ½ cup of Self Raising Flour
  • 135 g Wollundry Grove Extra Virgin Olive Oil (Delicate)
  • ½ cup of Milk
  • 1 cup of Caster Sugar
  • 2 eggs, lightly beaten (For egg allergy - 3 full tsp Orgran egglike powder)
  • 1 grated Lemon rind
  • 2 tbsp. lemon juice

Recipe:

  1. Sift flour, add sugar, oil, milk, grated rind, juice, and eggs.
  2. Beat well for 5 minutes.
  3. Bake in moderate oven approximately 30 minutes.
