Baked Fresh Snowy Mountains Trout
- Fresh Snowy Mountain Trout
- Wollundry Grove Extra Virgin Olive Oil
- Wollundry Grove Black Manzanillo Olives
- Your Choice of Vegetables
- Pre-heat oven to 180 degrees.
- Lay foil on baking tray and dribble some Wollundry Grove Extra Virgin Olive Oil.
- Oil both sides of the fish fillet.
- Transfer fish to the baking tray (skin side down), sprinkle with pepper and dill.
- Add Wollundry Grove Black Manzanillo Olives (roughly diced).
- Bake for approximately 15 minutes.
- While baking, blanch your favourite vegies, drain and dribble more olive oil.
- Remove fish from oven.
